A chard tamale with tomato, onion and epazote, is served at Quntonil restaurant in Mexico City on May 31, 2012. All the ingredients of the salad were cultivated in "chinampas", at the Xochimilco area, with ancestral tecniques. The "chinampas" are artificial islands that were created by the Toltec culture 1,000 years ago for agricultural purposes in the Xochimilco area, south of the system of lakes where the Mexican capital sits.
